Senior night for our Lady Mustang Basketball team was last night and it was a fabulous turnout. Maris wanted to make some sweets for the team in honor of our seniors and so she turned to the source that all teenagers turn to for inspiration--Pinterest. She decided that Cake Pops would be perfect.

Have you guys seen or heard of these? They are a fun alternative to cookies and easier to eat than cake. This is the recipe we followed:
Make the cake and let it cool. Cut the cake into small pieces and put into a large bowl. Stir the frosting into the cake and mix it all together with your hands. It should be moist but not too wet. Roll the mixture into balls and place on a cookie sheet. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Melt a bag of chocolate candy melts in a double broiler.

Dip a lollipop stick into the melted candy and then into a cake ball about 2/3 of the way through. Dip the ball into the melted candy {make sure that's it not too hot} making sure to cover the whole thing. Spin it to remove the excess. While its still wet, sprinkle it with your choice of decorations. It will cool fairly quickly.
